- 1/2 c @trurootsorganic quinoa
- 1 cup veggie stock
- 2 tsp @bareorganicssuperfoods barley powder
- 1/2 c @primalkitchenfoods vegan Mayo
- 1 tsp wasabi
- squeeze lemon juice
- 1/2 tsp maple syrup
- salt and pepper to taste
START by cooking your quinoa according to package instructions. Subbing water for veggie stock and adding your barley into the pot. Once cooked. Set aside and fluff before serving :)
FOR THE DRESSING, simply combine all ingredients into a bowl and whisk until thoroughly combined.
TO ASSEMBLE add your quinoa, kale, arugula, peas, edamame and avocado into a bowl and serve with that punchy wasabi dressing! This one is so satisfying!
