2 tbs olive oil
3 large sweet potatoes, peeled and chopped
3 large carrots, peeled and chopped
1 cup red lentils halved
1/2 tsp minced freshed ginger
1/2 teaspoon ground black pepper
1 tsp salt
1/2 tsp ground cumin
1/2 tsp chili powder
1/2 tsp paprika
4 cups water
4 scoops powder mushroom broth
4 scoops BareOrganics Mushroom Immunity Blend
1. In a large pot, add your olive oil, ginger, onion, carrots and sweet potato. Cook until the onion browns and is slightly transluscent. Then, add your spices, 1/2 cup of lentils, water and broth. Bring to a boil, reduce heat, and simmer for 30 minutes.
2. Once the soup is simmering, cook the remaining 1/2 cup of lentils according to package instructions. Cook, drain, and rinse. Set aside ready for topping the soup.
3. Once the soup is thoroughly cooked, remove from heat, stir in BareOrganics Mushroom Blend and transfer to a blender in batches, pulsing until smooth and creamy. Return to your pot and warm through.
4. Add soup to a bowl and top with cooked red lentils, pumpkin seeds, chili flakes, and fresh basil! Enjoy!
