Recipe and PC @lovelydelites
2 cups of whole-wheat flour
1/2 Tbsp baking powder
1/4 tsp salt
1 tsp cinnamon
2 ripe bananas
1 + 1/2 cup almond milk
1 tsp vanilla
1/2 cup shredded coconut
1 cup dark non-dairy chocolate chips
1/2 cup of goji berries
Soak goji berries in 2 cups of hot water for 15 minutes.
Preheat oven to 350F and line a jumbo muffin tin with liners or spray with non-stick spray.
In a large bowl, combine flour, baking powder, cinnamon and salt.
In a separate medium bowl, mash the bananas then whisk in the eggs.
Add in the almond milk and vanilla and mix until well combined.
Then, add in the shredded coconut, goji berries and chocolate chips.
Add mixture to dry ingredients and mix with a spatula until just combined.
Pour batter into prepared muffin tin and bake in the oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.
